  1. Preheat the oven to 350°F (175°C). Spread the hazelnuts on a baking sheet and roast for about 10 minutes until they are fragrant. Remove and let cool slightly.
  2. Place the roasted hazelnuts in a clean kitchen towel and rub them together to remove most of the skins. (A few bits of skin left are fine.)
  3. Transfer the hazelnuts to a food processor and blend until they turn into a smooth butter, about 3–5 minutes. Scrape down the sides as needed.
  4. Add the powdered sugar, cocoa powder, vanilla extract, and salt. Blend again until well combined.
  5. While blending, slowly drizzle in the oil and melted dark chocolate (if using). Blend until smooth and creamy. If needed, add milk one tablespoon at a time to reach your desired consistency.
  6. Taste and adjust sweetness if needed. Transfer the spread into a clean jar and store in the fridge for up to 2 weeks. Let it sit at room temperature before using to soften.
