Ingredients
    For the Shrimp:
  • 1 lb large shrimp, peeled and deveined (with tails on for extra presentation)
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 of Zest lime
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey (optional for a hint of sweetness)
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and freshly cracked black pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • For the Avocado Salsa:
  • 2 ripe avocados, diced
  • 1 medium tomato, diced
  • 1 small red onion, finely chopped
  • 1/2 cucumber, diced
  • 1 tablespoon fresh cilantro, chopped
  • 1 jalapeño pepper, finely chopped (optional for heat)
  • 1 tablespoon fresh lime juice
  • Salt and freshly cracked black pepper to taste
Instructions
  1. 1. Marinate the Shrimp:
    • In a medium bowl, whisk together the garlic, olive oil, lime zest, lime juice, honey (if using), chili powder, smoked paprika, salt, and pepper.
    • Add the shrimp to the bowl and toss them well to ensure they’re evenly coated in the marinade.
    • Cover the bowl with plastic wrap and refrigerate for 20–30 minutes to allow the flavors to meld together. Don’t marinate for too long, as the lime juice can start to "cook" the shrimp.
  2. Prepare the Avocado Salsa:
    • While the shrimp is marinating, prepare the avocado salsa. In a separate bowl, gently combine the diced avocados, tomato, red onion, cucumber, cilantro, and jalapeño (if using).
    • Add the fresh lime juice, then season with salt and pepper to taste.
    • Mix gently to avoid mashing the avocado. Set aside to allow the flavors to blend together.
  3. Preheat the Grill:
    • Preheat your grill to medium-high heat, ensuring it’s well oiled to prevent the shrimp from sticking. If using a grill pan, heat it over medium-high heat and coat it with a little cooking spray or oil.
  4. Grill the Shrimp:
    • Thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 10-15 minutes prior to grilling).
