Homemade Strawberry Sauce

Description

This strawberry sauce is a delicious topping for everything from pancakes and waffles to cheesecakes, ice cream, and even yogurt! With a fresh strawberry flavor, a hint of sweetness, and a thick, glossy texture, this sauce is simple to make and versatile.

Ingredients
  • 2 lbs fresh strawberries hulled and halved (reserve 1 cup of smaller strawberries to add at the end)
  • 1/4 cup sugar
  • 1/2 cup water
  • 1 tbsp light corn syrup for added smoothness and shine
  • 1 tsp 1 cornstarch mixed with 2 tbsp water to make a slurry
Instructions
  1. Rinse and hull all strawberries. Slice larger strawberries in half and leave 1 cup of the smaller strawberries whole or halved to add at the end for texture.
  2. In a medium saucepan, combine the prepared strawberries (minus the reserved 1 cup), sugar, water
  3. Bring the mixture to a gentle boil over medium heat, stirring occasionally to dissolve the sugar. Allow it to simmer for about 8–10 minutes, or until the strawberries release their juices and start breaking down.
  4. For a smoother sauce, blend it after the strawberries release their juices and start breaking down. A quick blend will give a nice, even texture.
  5. Add corn syrup “Optional”. The corn syrup adds a nice sheen and helps prevent crystallization, but you can leave it out if you prefer.
  6. After simmering, reduce the heat to low. Add the cornstarch slurry (1 tsp cornstarch mixed with 2 tbsp water) to the saucepan, stirring continuously.
  7. Continue cooking for another 2–3 minutes or until the sauce thickens and becomes glossy. If it’s too thick, add a bit of water, a tablespoon at a time, until you reach your desired consistency.
  8. Add the reserved 1 cup of strawberries "chopped", These will add a fresh, chunky texture to the sauce.
  9. Let the sauce cool for a few minutes before using. It will continue to thicken slightly as it cools.
  10. Serve warm, room temperature, or chilled, depending on your preference.
