Instructions

Marinate the Shrimp

  1. In a medium bowl, whisk together olive oil, chopped chipotle peppers, adobo sauce, smoked paprika, garlic powder, cumin, cayenne pepper, lime juice, salt, and pepper.
  2. Add the shrimp and toss to coat evenly. Cover and refrigerate for 15 minutes to allow flavors to meld.

Prepare the Avocado Lime Slaw

  1. In a large mixing bowl, combine the green cabbage, purple cabbage, and carrot.
  2. In a separate bowl, mash the avocado until smooth. Stir in Greek yogurt, lime juice, cilantro, honey, salt, and pepper until creamy.
  3. Pour the avocado mixture over the slaw and toss until well coated. Adjust seasoning to taste. Refrigerate until ready to serve.

Cook the Shrimp

  1. Heat a large skillet or grill pan over medium-high heat.
  2. Add the marinated shrimp in a single layer and cook for 2-3 minutes per side, or until the shrimp are pink and cooked through. Remove from heat.

Assemble the Tacos

  1. Warm the tortillas in a dry skillet or microwave.
  2. Place a few shrimp in each tortilla, top with a generous serving of avocado lime slaw, and sprinkle with crumbled queso fresco if desired.
  3. Garnish with fresh cilantro and serve with lime wedges on the side.

Tips for Success

  • For extra smoky flavor, grill the shrimp instead of pan-searing.
  • Add sliced jalapeños or a drizzle of hot sauce for even more heat.
  • Use pre-shredded coleslaw mix to save time on prep.

Enjoy these vibrant and flavorful tacos that bring together the smoky heat of chipotle and the creamy tang of avocado lime slaw! 🌮
