Description

Sweet and Heat Apple Chicken Stir-Fry is a perfect blend of sweet, spicy, and savory flavors! Tender chicken, crisp apples, and earthy mushrooms come together in a flavorful sauce with a kick of jalapeño and a hint of ginger. This quick and easy dish is ideal for weeknight dinners or impressing your guests with something unique and delicious. Serve it over rice or noodles for a wholesome and satisfying meal!

Ingredients
  • 1 lb Boneless Chicken Breast Thin Sliced
  • Salt and Pepper
  • 1 Small Onion chopped
  • 3 Small Sweet pepper diced
  • 1 Jalapeno Pepper diced
  • 2 cloves Garlic minced
  • 5-6 Medium Mushrooms sliced
  • 2 Green Apples peeled, cored, and thinly sliced
  • 3 tbsp Olive Oil
  • 1/4 cup Chicken Broth
  • 3 tbsp Soy Sauce
  • 2 tbsp White Vinegar
  • 1 tsp Ginger Powder
  • 1/4 cup ketchup
  • 3 tbsp Honey
  • 1 tbsp Cornstarch + 2 tbsp Water for thickening (for slurry)
Instructions
  1. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown on the outside and fully cooked through. Remove and set aside.
  2. In the same skillet, add a bit more olive oil if needed. Sauté the onion, garlic, and the peppers until softened.
  3. Sauté the mushrooms after cooking the onion, garlic and Pepper, let them release their juices and brown slightly.
  4. Add the apples and cook for 2-3 minutes until slightly tender
  5. In a small bowl, mix chicken broth, soy sauce, white vinegar, ginger, honey, ketchup, . Whisk until smooth. Dissolve the cornstarch in 2 tablespoons of water and add it to the mixture.
  6. Return the chicken to the skillet with the cooked apples and vegetables. Pour the sauce over the top. Simmer on medium heat for 5-7 minutes, stirring occasionally, until the chicken is fully cooked and the sauce thickens slightly.
  7. Serve hot over steamed rice, noodles, or quinoa.
